Cherry cranachan

Serves 4
500g fresh cherries, plus a few stemmed cherries to decorate
80g jumbo oats
450ml double cream
3 tbsp clear honey
7 tbsp cherry brandy

Spread the oats out on a baking sheet and toast in the oven at 180ºC/gas mark 4 for 7 mins until golden. Allow to cool. Lightly whip the double cream until standing in soft peaks then fold in the honey and cherry brandy. Pit the cherries. Add the cherries and toasted oats to the cream mixture and stir until just combined.
Spoon into serving glasses and serve immediately, decorated with whole cherries on the stems.
