Deliciously soft golden flap jacks are elevated with the sweet notes of apricot jam. Whether a wholesome snack or a tasty treat to accompany a steaming cup of tea, these apricot jam flap jacks are indulgent, and bursting with fruity flavour and irresistible texture.

How to make jam flap jacks

Makes 9

200g unsalted butter, plus extra for greasing

200g golden syrup

50g plain flour

300g rolled oats

350g apricot jam

20cm square tin

Preheat the oven to 180°C/gas mark 4 and grease and line the tin with greaseproof paper. In a large saucepan, place the butter and golden syrup, then heat until melted, stirring occasionally. Off the heat, mix in the flour and oats until thoroughly combined, then transfer half of the mixture to the tin and flatten out with the back of a spoon. Layer the jam over the oats, covering completely, then top with the remaining oat mixture, flattening it out roughly on top.

Bake for 30-35 mins, then allow to cool in the tin. Once cool, cut into nine pieces and serve or keep in an airtight container for up to 4 days.
